Servings: Makes about 40 pancakes
Preparation time: 15 minutes
Ingredients:
1 large tart apple, peeled, cored and quartered
1½ cups Bison Cottage Cheese
6 large eggs
1 tablespoon sugar, optional
½ teaspoon cinnamon
¼ teaspoon nutmeg
½ cup flour
⅛ teaspoon salt
3 tablespoons unsalted butter, melted
Directions:
Shred apple into a bowl – it should yield about 1½ cups.
Add the remaining ingredients and beat for 30 seconds. Spoon
the batter onto a hot, buttered skillet or griddle to form
pancakes about 2½-inches in diameter. Cook until golden,
turning once. Serve with your choice of topping. |
